Cinco de Mayo is on May 5th this year. We are planning a fun, easy fiesta - but I don't have all day to prepare food for it. So over the years, I've developed no fuss, no fail Mexican recipes made from simple ingredients.
For our family, I'm keeping it simple and starting Taco Rice in the slow cooker in the morning. Then, after work and homeschool, I'll make my canned tomato Pico de Gallo and Black Bean Salsa. I'm going to try the Cilantro Lime Ranch dressing (my sister Claudia's family recipe). It's going to be delicious (and easy!).
