Winslow table plans

I'm a former mechanical designer (i created blueprints for a living) so I can work with solidwork. However I have never designed furniture. All my designs were for metal parts. I'll just start asking questions and post my blueprint changes as I go along that way other people can learn as well and eventually they can have a blueprint they can work off to make a modern table. :)

Here are my first few questions:
1. From what I gather they are using maybe one inch thick cherry wood. Is that a common thickness? If not what should I use (Preferably thicker than than thinner)?
2. I see they use dowels. In metal I would get away with 5/8 dowel. But for wood I'm assuming maybe something like 1/2 is better?
3. Where could I buy cherry wood (eventually once the plan is done) online that is already flat and offers sizes like the ones I need? I don't have a planar and I noticed most online places sell smaller than 8 inch width. Looks like the to of the table is 3 boards 12" width and 8' long. The "legs" are even wider than that.
